One day as I was grocery shopping, I noticed some beautiful purple sweet potatoes. Combined with orange sweet potatoes, they make a colorful, rustic dish. Add a little brown sugar butter, and these yummy, hearty potatoes can actually be eaten for dessert-much like a sweet potato casserole. They are very filling, so you'll probably only need one per person.
INGREDIENTS
Sweet Potatoes
purple sweet potatoes
orange sweet potatoes
Brown Sugar Butter
8 tablespoons (1 stick) butter
¼ cup brown sugar
¼ cup granulated sugar
INSTRUCTIONS
Preheat oven to 400 degrees.
Soften (don't melt) the butter. Add the brown sugar and granulated sugar and stir. Place the brown sugar butter in a ramekin and refrigerate (see photo).
Wash sweet potatoes thoroughly.
Poke sweet potatoes with a fork, and place on a baking sheet.
Bake for 30 minutes. Check for tenderness, and continue to bake another 10-15 minutes if necessary.
Split potatoes down the middle, and serve with brown sugar butter. You may also cut a few into rounds to garnish (see photo).
