My mother's spinach casserole is one of my favorite recipes for the holidays. It's savory and simple to make. This recipe makes 3 or 4 servings.
INGREDIENTS
1- 10 ounce package of chopped frozen spinach
2- diced fresh mushrooms
3- slices of crispy bacon
1/2 cup sour cream
1/2 cup shredded white cheddar cheese
marjoram spice and kosher salt to taste
INSTRUCTIONS
Preheat oven to 350 degrees.
Place the frozen spinach in a small sauce pan. Add 1/4 cup water and bring to a boil.
Reduce heat. Add mushrooms and bacon. Sprinkle kosher salt. Simmer for about 10 minutes.
Line the bottom of a small baking dish with the the spinach.
In a small bowl, combine the sour cream, marjoram spice and kosher salt. Fold in the shredded cheddar cheese. Dollop the cheese mixture on top of the spinach (see photo above).
Bake at 350 degrees for 25 minutes. If necessary, continue to bake until the cheese mixture is very lightly browned.
