Mom's Spinach Casserole


My mother's spinach casserole is one of my favorite recipes for the holidays. It's savory and simple to make. This recipe makes 3 or 4 servings.


INGREDIENTS

  • 1- 10 ounce package of chopped frozen spinach

  • 2- diced fresh mushrooms

  • 3- slices of crispy bacon

  • 1/2 cup sour cream

  • 1/2 cup shredded white cheddar cheese

  • marjoram spice and kosher salt to taste


INSTRUCTIONS

  • Preheat oven to 350 degrees.

  • Place the frozen spinach in a small sauce pan. Add 1/4 cup water and bring to a boil.

  • Reduce heat. Add mushrooms and bacon. Sprinkle kosher salt. Simmer for about 10 minutes.

  • Line the bottom of a small baking dish with the the spinach.

  • In a small bowl, combine the sour cream, marjoram spice and kosher salt. Fold in the shredded cheddar cheese. Dollop the cheese mixture on top of the spinach (see photo above).

  • Bake at 350 degrees for 25 minutes. If necessary, continue to bake until the cheese mixture is very lightly browned.
