DADDY FREDDY’S YEAST ROLLS with Cinnamon Honey Butter
INGREDIENTS
Yeast Rolls
· 1 cup warm water
· 2 cups warm milk OR half and half
· 2 teaspoons salt
· ½ cup granulated sugar
· 3 tablespoons honey
· 1 package dried yeast (2 ¼ teaspoons)
· 2 eggs (room temperature)
· 1 ½ sticks softened butter
· 8 cups all purpose flour
· Vegetable oil
Cinnamon Honey Butter
· 1 stick softened butter
· 3 tablespoons honey
· 1 teaspoon ground cinnamon
· ½ cup powdered sugar
Yields approximately 3 dozen rolls
INSTRUCTIONS
For this recipe, we used the KitchenAid Pro 600 Mixer, a bowl lift stand mixer.
This recipe can also be made with a hand mixer.
· Pour warm water, warm milk, salt, sugar and honey and yeast into the mixing bowl. Mix using the flat beater attachment on a low speed (1 or 2).
· Let the mixture sit for a few minutes. It will start to froth.
· Mix in the two eggs on a low speed.
· Mix in the softened butter on a slightly higher speed (3).
· Add the flour one cup at the time for the first two- three cups (speed level 3). Add one cup and thoroughly mix. Add the next cup and thoroughly mix. Continue.
· When the dough gets thick, replace the flat beater attachment with the dough hook.
· Continue to add the remaining flour one cup at a time (speed 3 or 4).
· The dough will be sticky. Turn the dough onto a floured surface, and shape it into a ball.
· Clean out the mixing pan.
· Coat the inside of the mixing pan with oil.
· Place the ball of dough into the oiled mixing bowl. Turn the ball of dough inside the bowl until it is thoroughly covered with oil. (The oil prevents the dough from forming a crust).
· Cover the bowl with a tea towel or plastic wrap. Let the dough sit in a warm place for one hour. As the dough sits it will double in size.
· Remove the cover, and punch down the dough with your fist.
· Roll out the dough and form the rolls.
· Let the rolls sit for one hour. They will double in size.
· Place the rolls in a 350 degree oven on the center rack for about 15 minutes until golden brown. It the tops aren’t browned after 15 minutes, place on a higher rack for another 3-5 minutes.
Cinnamon Honey Butter
Combine butter, honey, cinnamon and sugar with a whip until smooth.
Place in a ramekin and refrigerate for a half hour or more.
